Bamboo is very fast growing, so if these are established plants with large root systems already in place, recovery should be quite fast and you will have new, large canes by the summer. (Unlike a small, new plant that first needs to grow a root system before adding much above-the-ground growth).

Bamboo plants should be spaced 3-5 feet apart to form a dense screen. The faster spreading types can be planted farther apart if you are willing to wait a little longer for the screen to fill out.
