In 1828, C.J. van Houten of the Netherlands patented a process for pressing much of the fat, or cocoa butter, from ground and roasted cocoa beans, thus obtaining cocoa powder.

Cocoa is the dried and partially fermented fatty seed of the cacao tree from which chocolate is made. The word cocoa also is used to refer to cocoa powder, the dry powder made by grinding cocoa seeds and removing the cocoa butter from the dark, bitter cocoa solids.

Seeds (cocoa beans): Inside each pod are 20 to 50 cacao seeds, which are encased in a sweet-tasting pulp. The seeds are the key ingredient used to make chocolate.
