Finish the joint, then edge with some corner molding or similar. How much coverage of the existing frame is your choice. The right thing to do would be to re-case the doorway, though that might be more work than you're willing/capable to do.
In the standard doorway installation, the fulcrum is within the long horizontal tube. Your proposed wall-mount (good pic, btw) moves that fulcrum to the back uprights, meaning the lever arm you're pulling on is almost twice as long.

With that in mind, I want to do some kind of sound isolation between this room and the kitchen. I don't care much about the sound through the walls, (thank god for good insulation) just that open doorway. Putting an actual swinging or sliding door there probably wouldn't work. There's very little room on either side of the doorway for both rooms.
